The stevia plant produces extensively sweet molecules (glycosides) mainly in the leaves where the concentration of these molecules range from 8 to 12% of the volume of the leaves.
The glycosides present in the Stevia leaves are referred to as steviosides . Among these steviosides , the most common is the Stevioside followed by Rebaudioside. The stevioside has an herbal taste and the rebaudioside has no herbal taste.
